Astragalus (known as Huang Qi in Chinese) belongs to the pea family and is native to northeastern China, Mongolia, Korea, and Siberia. Its root has been used for at least 2,000 years in Traditional Chinese Medicine, in which it is considered one of the 50 fundamental herbs.

Astragalus tea is an easy and delicious way to enjoy the many health benefits of this wonderful plant.

WHAT YOU NEED

  • 2 teaspoons of astragalus root (as root chips or broken into small pieces)
  • 2 cups of (filtered) water



HOW TO MAKE

  1. Bring water to boil in a saucepan.
  2. Add astragalus root and boil another 3-5 minutes with the saucepan lid closed.
  3. Strain through a fine-meshed tea strainer or coffee filter.





CHEF’S NOTE

Astragalus is naturally sweet, so you probably won’t need to add a sweetener. But if you do, stevia is always a good choice.

And, astragalus is very safe to use with no known toxicity for daily use.
